Vegan Chick'n stew and Dumplings

Just made this yesterday. It's so delicious, and so filling. I also want to try making it into a pot pie filling.

The only differences I made were a bit more flour to thicken it a little further, and some herbes de provence (I'm in Quebec, maybe this is different in the English world?) instead of sage/parsley.

That looks amazing! I would love to try this. Herbes de Provence would also be amazing in this. What vegan chicken do you use? I think the best bet in America might be garde-in products. Mmmmm, I will be thinking about this all day today. 8)
