BAKED OATMEAL! If you hate oatmeal, you won't hate this!

i officially LIKE OATMEAL!!!! WOOHOO! i've been trying to like it for years because everyone else does haha and i know how good it is for me, and i know it's great for appetite control. i've tried it made with water, with soy milk, with maple syrup and brown sugar, brown sugar and cinnamon, peaches and maple syrup, strawberries, steel cut oats... you name it, i've tried it, and hated it. until todayyyy

i made BAKED oatmeal. totally eliminated the weird goopy texture that i can't get past. and it's delicious and really healthy!!

1 1/2 c toasted quick oats
1c soy milk (or whatever non-dairy milk you have) + maybe 1/3c orange juice
1 ripe banana
1tsp molasses
1tsp maple syrup
1/4c ground flax or flax seeds
1/4c wheat germ
spices to taste (i used cinnamon, cloves, nutmeg, and ginger)

preheat oven to 350.

smoosh half the banana, and throw it into a bowl. put everything else in and mix it with a fork until well-blended.

scrape the mixture into a VERY LIGHTLY GREASED 8x8 cake pan (i just rubbed a tiny bit of earth balance all over). throw it in the oven for 10 minutes.

have a glass of water. go do 8-minute abs.

take the oatmeal out of the oven after 10 minutes, and sort of chop/stir it up, pushing the inside to the outside, making it really chunky so it can brown as much as possible. Put it back in the oven.

wash your face, and put on clothes.

8 minutes later, take it out and it's done!! I ate mine warm with a little more molasses, the other half of the banana, and some more soy milk poured over. seriously freaking delicious.

This sounds AMAZING! Any idea what I use instead of molasses? Cause I have no clue where I'd get some here...I think most of the other ingredients I could find though...

You could probably use maple syrup...or treacle...yum.

ruth, i'd just use dark brown sugar (i KNOW you have that) and omit the maple syrup. won't be exactly the same but it'll be damn close.

I'm going to try this with agave nectar, oatmeal never kept me full until I switched to a lower GI sweetener. Thanks for posting this. =)

Yeah we have TONNES of brown sugar in the house...I just figured the molasses might be a sticking agent too...but yes brown sugar makes sense.

I was just going to say I found it in Holland and Barratts of all places, and it's a decent price and all for these massive organic jars of it :)
I'm going on the assumption that the toasted quick oats are essentially porridge oats. Basically stuff my mum's been saying I should eat for years lol
I will be trying this for a pre-exam breakfast :)

So doing this with dried cranberries and chopped green apples. We love oatmeal, but it gets boring sometimes!

i put apples in mine the day after i made this and thought i'd died and gone to heaven.
